HARVEST
the harvest is done by hand with buckets that come then unloaded in a wagon, towards the beginning of September

about 80 quintals per hectare
VINIFICATION
in steel in contact with the skins for about 8-10 days a a temperature of about 15 degrees, with frequent punching down, then it goes into a soft press
REFINING
in tonneau for at least one year, and in bottle for at least one year
PRODUCTION
first vintage 2003, about 650 bottles produced
ORGANOLEPTIC CHARACTERISTICS
color: very intense yellow
aromas: aromatic intensity typical of the grape, a lot spicy, rosemary, sage, mint
flavor: fresh ed intense, with marked sapidity, hints of fruit paste white, peach, pineapple, banana, slightly tannic
GASTRONOMIC PAIRINGS
it goes well with rather elaborate fish dishes, first courses white meat dishes, it also goes very well with aperitifs and aged cheeses

serve at 12-14 degrees
