VINIFICATION
after crushing, and a soft pressing, the must comes placed in steel tanks, where it is cooled to one temperature of about 15 degrees and fermentation starts, without the addition of selected yeasts, fermentation it goes on for about a month, always at temperature controlled, to preserve the aromatic heritage
REFINING
in steel barrels, always at a controlled temperature, for approximately for at least 8-10 months of production First vintage

ORGANOLEPTIC CHARACTERISTICS
Color: intense yellow
aromas: aromatic intensity typical of the grape, a lot spicy, rosemary, sage, mint
flavor: fresh and intense, with marked sapidity, hints of white pulp fruit, peach, pineapple
GASTRONOMIC PAIRINGS
it goes well with rather elaborate fish dishes, first courses white meat dishes, aperitifs and aged cheeses
SERVICE TEMPERATURE
serve at 12-14 degrees
